Abstract
Rancangan yang digunakan berupa Rancangan Acak Kelompok Faktorial (RAKF) dengan 2 perlakuan yang diulang sebanyak dua kali. Faktor perlakuan terdiri dari perbedaan cara pengemasan yaitu A0 (Pengemasan Vakum) dan Al (Pengemasan Non Vakum) dan lama penyimpanan sampai 8 hari. Parameter yang diamati meliputi analisa kadar air, aw, kadar lemak, kadar protein, total volatile base, Total Plate Count, dan uji mutu hedonik. Hasil penelitian menunjukkan bahwa perlakuan perbedaan pengemasan vakum dan non vakum pada suhu ruang terhadap umur simpan ikan asin sepat siam duri lunak berpengaruh nyata terhadap semua perlakuan. Berdasarkan anilisis yang dilakukan komposisi nilai yang didapat adalah kadar air berkisar 29,3-39,02%, protein berkisar 38,06-51,01%, aw berkisar 0,77-0,87, lemak berkisar 8,12-11,55%, TVB berkisar 10-20, sedangkan uji mikrobiologi pada pengemasan non vakum hanya dapat dikonsumsi pada penyimpanan hari ke 6 dan perlakuan pengemasan vakum masih dapat dikonsumsi sampai hari ke 8. Berdasarkan penelitian yang dilakukan perlakuan yang terbaik menggunakan pengemasan vakum. Kata kunci : ikan sepat siam, umur simpan, pengemasan vakum
