Abstract
This research aims to determine the effect of adding gambier leaf extract on the physical, chemical, functional and sensory properties of hard candy. This research used a factorial Completely Randomized Design (CRD) method consisting of 9 treatments. Each treatment was repeated 3 times. Treatment factors include the position of gambir leaves and the concentration of gambir leaves which are added as follows: 20 percent gambir leaf extract: young leaves, 30 percent gambir leaf extract: young leaves, 40 percent gambir leaf extract: young leaves, 20 percent gambir leaf extract: middle leaves, 30 percent gambir leaf extract: middle leaves, 40 percent gambir leaf extract: middle leaves, 20 percent gambir leaf extract: old leaves, 30 percent gambir leaf extract: old leaves, 40 percent gambir leaf extract: old leaves. The parameters observed in this study were sensory characteristics using a liking (hedonic) test including color and taste and chemical characteristics (pH, total phenol, antioxidant activity, water content and ash content). The results showed that the addition of gambier leaf extract to hard candy had a significant effect on antioxidant activity, total phenols and pH of hard candy gambier leaf extract.
