Abstract
Volatile compounds are a group of compounds that have the property of easy evaporation and contribute to the aroma and flavor of a food substance. The source of volatile compounds originates from within the product's composition and influences factors such as species, sex, age, size, and processing type. This research aims to determine the volatile compounds of snakehead fish based on weight differences, to understand the grouping patterns of volatile compounds using PCA analysis and to understand the chemical characteristics (moisture content, protein content, fat content, ash content, amino acids, and fatty acids) of snakehead fish based on weight differences. The research method used was an RBD (Randomized Block Design) with weight differences (200-300 g (S1), 400-500 g (S2), 600-700 g (S3), and 800 g -1 kg (S4). The research parameters used were proximate analysis (moisture content, ash content, fat content, protein content), amino acids, fatty acids, and volatile compound analysis with SPME-GC/MS. The results showed that the proximate analysis results of the highest moisture were at weight (S1), the highest protein content was at weight (S4), the highest fat content was found at weight (S2) and (S4), and the highest ash content was at weight (S2). In amino acids, the highest concentrations were Lysine and glutamic acid. In fatty acids, the analysis showed that snakehead fish samples contain Palmitic acid, Oleic acid, and DHA. The PCA analysis showed a grouping pattern among weights blended, indicating that the volatile compounds were not different. Different volatile compounds contributing to aroma were obtained in the contribution plot at each weight. Most of the detected volatile compounds in the four samples come from aromatic hydrocarbon groups. Suggestions that can be given in this study include verifying volatile compounds identified as markers for each group of snakehead fish.
