Abstract

MANDA FEBRIA AZHARI, The Ratio of The Concentration of Lotus (Nelumbo nucifera) and Seaweed (Eucheuma spinosum) to the Characteristics of Sausages Analogy of Lotus Seeds (Supervised by ACE BAEHAKI ) This study aims to determine the comparison of concentrations of lotus seeds (Nelumbo nucifera) and seaweed (Eucheuma spinosum) on the characteristics of analogue sausages with lotus seeds. This research used a Completely Randomized Design (RAL) with 3 treatment factors with 3 replications. Treatments used different concentrations of lotus seeds (Nelumbo nucifera) and seaweed (Eucheuma spinosum), namely P1 (50% lotus seeds and 50% seaweed, P2 (60% lotus seeds and 40% seaweed) and P3 (70% lotus seeds and 30% seaweed). The parameters observed were water content, ash content, fat content, protein content, carbohydrate content, elasticity, juiciness, organoleptic tests. The results showed that there were differences in the concentration of Lotus Seeds (Nelumbo nucifera) and Seaweed (Eucheuma spinosum) was used to show significant differences in water content, protein content, elasticity and juiciness, and no significant difference in ash content, fat content and carbohydrate content. Analog sausage test results with water content values ranging from 46.003% - 52.15%, ash content ranging from 1.471%-1.661%, fat content 10.32%-10.64%, protein content 13.01%-14.01%, carbohydrate content 22.84%-27.87%, elasticity ranges from 39.3 g.f- 57. 66 g.f. and juiciness 10.58%- 28.87%. The organoleptic values of the hedonic test were texture (4.28-5.32), aroma (5.40-5.60), taste (4.52-5, 76) and color (4.72-5.68). Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) dengan 3 faktor perlakuan dengan 3 kali ulangan. Perlakuan menggunakan perbedaan penambahan konsentrasi Biji Lotus (Nelumbo nucifera) dan Rumput laut (Eucheuma spinosum) yaitu P1 (50% biji lotus dan 50% rumput laut, P2 (60% biji lotus dan 40% rumput laut) dan P3 (70% biji lotus dan 30% rumput laut). Parameter yang diamati yaitu kadar air, kadar abu, kadar lemak, kadar protein, kadar karbohidrat, kekenyalan, juiciness, uji organoleptik. Hasil penelitian menunjukkan bahwa perbedaan konsentrasi Biji Lotus (Nelumbo nucifera) dan Rumput laut (Eucheuma spinosum) digunakan menunjukkan perbedaan nyata terhadap kadar air, kadar protein, kekenyalan dan juiciness, serta tidak berbeda nyata pada kadar abu, kadar lemak dan kadar karbohidrat. Hasil uji sosis analog dengan nilai kadar air berkisar 46,003%-52,15%, kadar abu berkisar 1,471%- 1,661%, kadar lemak 10,32%-10,64%, kadar protein 13,01%-14,01%, kadar karbohidrat 22,84%-27,87%, kekenyalan berkisar 39,33 g.f- 57,66 g.f. dan juiciness 10,58%-28,87%. Nilai organoleptik uji hedonik dihasilkan tekstur (4,28-5,32), aroma (5,40-5,60), rasa (4,52-5,76) dan warna (4,72-5,68). Kata kunci: Sosis Analog, Biji Lotus, Rumput Laut, Konsentrasi
