Abstract

Nutrition services need to be carried out according to minimum hospital service standards, one of the indicators is that the patient’s food waste should not be more than 20%. Patient satisfaction with food service can influence patient’s food intake which affects the amount of food left by the patient. This research aims to determine the relationship between the level of satisfaction of food service and food waste inheart patients Besemah Hospital, Pagaralam. This type of research is observational analytic research and use Cross Sectional study design with total sample of 40 people. The samping technique is purpisove sampling. The samples were inpatients who had been treated for at least 2 days and were given heart diet 3 in treatment classes 2 and 3. The data analisis was univariate and bivariate which analyzed by fisher exact. The data are then presented in the form of tables and narratives to interpret it. The results showed that there was a relationship between the level of satisfaction of food service and food waste (p=0,001). Data shows that 87,5% of patients were satisfied with food service and 87.5% of patient’leftovers are lower than 20%. It was concluded that the level of patient satisfaction was quite good but still did not meet the minimum service standards (≥90%). The suggestion of this research is tht it is necessary to evaluate the menu cycle periodically so that there will be no repetition of food ingredients and food processing so that it can increase patient interest in served food which can meet the minimum hospital service standard (≥90%).
