Abstract

The research was conducted from September until November 2006 in The Laboratory of Processing Fisheries Product, Agriculture Faculty Sriwijaya University and Laboratory of processing at the Department of Science and Food Technology, IPB. The objective of this research was to determine effect of addition Kappaphycus alvarezii to pempek made of Ophiocephallus striatus characteristics. Observed paramaters were physical analysis including elasticity, sensory analysis, and the Chemical analysis were proximate analysis and dietary fiber content. The research used randomized block design with one factor and three replications for each treatment. The treatment was addition concentration of K alvarezii 0%, 5%, 10%, 15% and 20%. The parameters were elasticity, dietary fiber content, color, flavour, taste, visibility, texture, water content, mineral content. protein content, fat content and carbohydrate content. The result showed that addition of K. alvarezii had significant effect on dietary fiber and pempek elasticity. The addition of seaweed decreased pempek elasticity and increased dietary fiber content in pempek. Most panelists preferred pempek that was added with 10% K. alvarezii for the visibility and texture of pempek, with 56,09% water content, 1,40% mineral content, 2,34% protein content, 10,21% fat content, and 29,96% carbohydrate content. The addition of 5% K. alvarezii was found to bc the best treatmcnl with elasticity 4,742 kgf and 4,49% dietary fiber. Based on the result from the research, K. alvarezii addition to pempek making process, not give better characteristics pempek. As the result, K. alvarezii is not recommended to be a tapioka substitutes.
