Abstract

This research was to know the effect of freezing to the snakehead {Chana streata) minced quality and Nile tilapia {Oreochromis niloticus). The research was conducted at Fishery Product Technology Laboratory, Chemical Harvesting Agriculture Laboratory and Chemical Engineering Bio-Process- Chemistry Laboratory, Sriwijaya University start from July 2009 until July 2010. The design used Factorial Randomized Complate Design with the freezing duration time and kind of fish as the treatment and repeated three times. The parameters at this research were water content, protein content, fat content, pH, texture color (lightness, chrome and hue) and the organoleptic test, that was contain appearance, texture, (minced which had made gel fish) The result showed the kind of fish different treatment and the freezing time had significantly affected to the water content, fat content, chrome, of minced on scale test 5%, but had not significantly affected to the pH, lightness, hue, texture minced at scale test 5% and had significantly affected to the organoleptic gel fish at scale test 5% . Snakehead fish water content 68.76-80% and nile tilapia water contents 70.02-77.21%, snakehead fish protein content 50.68-78.34% and nile tilapia protein content 50.26-74.21%, snakehead fish fat content 1.16-5.87% and nile tilapia fat content 2.73-3.99%, snakehead fish pH 5.73-6.91 and nile tilapia 5.88-7.38, snakehead fish lightness 60.17-61.17 and nile tilapia lightness 59.71-61.1, snakehead fish chrome 8.17-11.83 and nile tilapia chrome 9.83-12.2, snakehead fish hue 75- 86.27 and nile tilapia hue 100.07-104.83, snakehead fish texture 550.37-661.57 and nile tilapia texlure 434-511.33 at test scale 5%. Snakehead fish and nile tilapia minced at the freezing time 28 day still accepted by the panelist, according to the result that was acquired at the sensory showed not too many exchanging.
