Abstract

The objective of the research was to produce and to know the edible film characteristic from surimi rice field eel and tapioca combine. The research was conducted from August until October 2008 in Technology of Fishery Product Laboratory and Agricultural Chemical Laboratory, Agriculture Faculty also Physics Laboratory, General Base Laboratory, Sriwijaya University. The experiment was designed in Factorial Randomized Block Design with surimi of rice field eel concentration and tapioca as the treatment factors and were done in triplicates. The treatment were surimi of rice field eel concentration (4%, 6%, and 8%) and tapioca concentration (1%, 3%, and 5%). The parameters were thickness, pressure strength, tensile strength, percentage of elongation, water vapour transmition rate and water activity. The results showed that surimi concentration, tapioca concentration and interaction between the two treatments significantly affected on 5 % test the thickness, pressure strength, tensile strength, percentage of elongation, water vapour transmition rate, and water activity. The best treatment was at 6 % surimi concentration and 3 % tapioca concentration combine with the edible film characteristic were 0,11 mm of thickness, 6,51 N/m2 of pressure strength, 10,46 N/m2 of tensile strength, 32 % of elongation, 6.77 g.m"2 hari transmition rate and 0,27 of water activity.
