Abstract

The research was conducted from 21^ Maret 2013 until 26 July 2013 in Technology of Fisheries Product Laboratory, Chemistry and Microbiology Laboratory of Agricultural Technology, Laboratory of Bioprocess Engineering Department of Chemistry. The purpose of this study was to determine the physical quality characteristics pempek lenjer in the city of Palembang by price criteria and determine whether or not the content of borax and alum on pempek lenjer. This study used a descriptive analysis from the results of data of laboratory analysis. It has taken by getting sampling activity for twice during a month. Sample is pempek lenjer which has divided into four categories. The division of categories based on the price from cheapest until the most expensive. Each category are taken from 4 different producers in the city of Palembang. Each sample is described by looking the quality which has included like the degree of elasticity, the degree of whiteness, filth, and content of borax and alum. The division of pempek lenjer categories are category 1 is pempek which has the price under Rp.900, category 2 is pempek which has the range of price from Rp. 900 until Rp. 2.000, category 3 is pempek which has the range more than Rp. 2.000 until Rp. 3.000, and category 4 is Pempek which has price more than Rp. 3.000 The results of this research showed that the highest elasticity and whiteness value from sixth producers which has a values are 503.7 g.force and 73.28. The high value of elasticity is thought to be influenced by the ratio of flour and fish are used. Filth value was highest in the flfth producers to manufacturer's ninth respectively filth consists of 4 pieces. Based on the test results borax, there is a positive 3 producers using borax, which is the first producers, fourth producer, and seventh producers. While the results of the measurement content of alum, alum highest value pempek lenjer levels are at eleventh producers of 69.5 ppm.
