Abstract
Nutrition plays an important part in supporting children's optimal growth and development. Many factors can cause nutritional problems on children, one of which is the inappropriate use of MP-ASI. This research aims to determine the best formulation of MP-ASI with the addition of catfish flour (Clarias sp) and gotu kola leaf flour (Centella Asiatica). This type of research is experimental research and use RAL study design. The object of research is cookies with the addition of catfish flour and gotu kola leaf flour in a ratio 50gr:0gr, 40gr:10gr, 35gr:15gr, and 30gr:20gr. The organoleptic test used 30 untrained panelists. The data analisis was univariate and bivariate which analyzed by Kruskal Wallis and Post Hoc Dunn. The data are then presented in the form of tables, grafics and narratives to interpret it. The research showed that there are differences in the level of preference for taste, aroma, and color, but there’s no difference in texture parameter. The organoleptic test results showed that the F1 formulation was superior in terms of taste (26.9%) and aroma (26.5%), F0 formulation is superior in color (26.9%), and F2 formulation is superior in texture (27.8%). The Likert scale score values in the formulation are F0 (3.28), F1 (4.00), F2 (3.30) and F3 (3.30) so it can be concluded that the F1 is the selected formulation.The results of the nutritional content test in the F1 formulation cookies, the water content was 11.42%, the ash content was 5.45%; the protein content was 12.35%; the carbohydrate content was 50.44%; and the fat content of 20.34%. The suggestion of this research is that after cooling the cookies, it is best to store them in an airtight and dry container so that they do not absorb water and the surrounding air. Further research carried out requires the addition of aroma to reduce the fishy smell of catfish and gotu kola leaves.
