Abstract

Abstract (English): This study aims to evaluate the effect of temperature stress on chlorophyll content and antioxidant activity in papaya microgreens (Carica papaya L.), cultivar callina. Papaya microgreens are known for their high nutrient content and bioactive compounds, making them a potential source of functional food. Temperature elicitation was applied with three temperature treatments: control (28°C), low temperature (4°C), and high temperature (40°C) for 1 hour. Spectrophotometric analysis showed that low-temperature stress (4°C) significantly increased total chlorophyll content compared to high-temperature and control treatments, with higher chlorophyll a, chlorophyll b, and total chlorophyll content at 59.91 µg/ml. Conversely, high-temperature stress (40°C) decreased total chlorophyll content to 17.21 µg/ml, although there was no significant difference with the chlorophyll content in the control treatment (28°C) at 29.68 µg/ml. Antioxidant activity was tested using the DPPH method, with results indicating very strong antioxidant activity at the control temperature (IC50 = 7 µg/ml), which weakened under low and high-temperature stress (IC50 = 181 µg/ml and 265 µg/ml, respectively). This decrease is likely due to the consumption of antioxidants to neutralize free radicals generated during temperature stress. The study concludes that low-temperature stress (4°C) influences total chlorophyll content in papaya microgreens cultivar callina, while high-temperature stress (40°C) has no effect on total chlorophyll content. However, both low (4°C) and high (40°C) temperature stress affect antioxidant activity in microgreen extract of papaya cultivar callina.
