Abstract

Temperature is a critical factor in food storage as it affects the quality and safety of food. Improper storage temperatures can lead to changes in color, texture, taste, and nutritional content, negatively impacting patient health. Additionally, spoiled food can result in financial losses for hospitals due to the need to discard and replace many food items. This study aimed to improve the management of nutritional service quality, particularly in maintaining food safety and quality, by using the TMAPP application to monitor chiller temperatures in the Nutrition Installation at RSUP Dr. Mohammad Hoesin Palembang. The study employed a Research and Development (R&D) method with a prototype model as the basis for the application development. The TMAPP application was developed to record temperatures efficiently, provide notifications on temperature conditions, and be accessible via smartphones, tablets, or computers. The application features a simple design for ease of use, including temperature input, graphical visualization, and chiller notifications. The system operates on Android. The application was tested using the black box testing method, and the results indicated that TMAPP met the basic functional requirements, with all test cases being valid. This study is expected to provide insights and recommendations to hospital management to enhance the efficiency and effectiveness of nutritional service quality management, particularly in maintaining food safety and quality using the TMAPP application for chiller temperature monitoring at RSUP Dr. Mohammad Hoesin Palembang.
