Abstract

Hazardous food additives are still widely used by traders with the aim of extending product shelf life and gaining profit without considering the health impacts. This study aims to analyze the factors influencing the use of hazardous food additives among food vendors in Palembang. This study used a cross-sectional design by selecting 98 traders in Palembang as samples through purposive sampling based on inclusion criteria. Data collection was conducted using questionnaires through interviews and observation sheets with checklists. Data analysis employed univariate, bivariate (chi-square test), and multivariate analysis (multiple logistic regression with predictive modeling). The study results indicate that age (p-value = 0.044), education (p-value = 0.000), knowledge (p-value = 0.007), and attitude (p-value = 0.002) are significantly associated with the use of hazardous food additives among food vendors in Palembang. In contrast, gender (p-value = 0.166), income (p-value = 0.688), trading duration (p-value = 1.000), and government supervision (p-value = 1.000) show no association with this behavior. This research finds that education is the most influential factor on the behavior of using harmful food additives among street food vendors in Palembang City. Consequently, it is recommended that the government implements educational programs to inform food vendors about safe food additives.
