Abstract
This study aims to examine the concentration of seaweed juice in the manufacture of seaweed powder drink (Eucheuma cottoni) by the encapsulation method. This study was conducted using the Complete Random Design (RAL) method with 4 levels of treatment 3 repetitions, namely M1: 75% seaweed juice concentration, 150% seaweed juice concentration, 255% seaweed juice concentration, 300% seaweed sri concentration. The research parameters used were yield, moisture content analysis, solubility analysis, dissolution velocity, total dissolved solids analysis, total fiber analysis, hygroscopic level analysis and hedonic test. The results showed that the yield of seaweed pollen drinks produced ranged from 18.48% - 20.75%, seaweed pollen drinks contained air content ranging from 6.0% - 8.0% with a dissolution rate of 23.14 seconds - 31.43 seconds and a solubility of 91.09% - 97.38%. The total dissolved solids in seaweed pollen drinks ranged from 14 0 brix – 21 0 brix with a dietary fiber content of 0.97% - 2.49%. The hygroscopic in seaweed pollen drinks ranged from 6.72% to 8.95%. Hedonic test on seaweed pollen drink with color parameters ranging from 3 - 4, aroma parameters ranging from 3 - 4 and taste parameters ranging from 3 - 5 Along with increasing the concentration of seaweed juice has a real effect on moisture content, yield, dissolution rate, hygroscopic, and dietary fiber
