Abstract

Lead contamination in vegetables has become a significant threat to food safety. Consumption of vegetables contaminated with lead can cause health disorders, such as anemia and impaired brain function. This study aimed to analyze the sources of lead contamination in water spinach sold at KM 5 Market in Palembang City. The study uses a qualitative research method with a descriptive approach. Data were collected through in-depth interviews with six informants and analysis of four samples, consisting of two samples of water spinach from outside sellers (stems and leaves) and two samples from inside sellers (stems and leaves). The water spinach samples were analyzed at the Baristand Laboratory in Palembang City using Atomic Absorption Spectrophotometry (AAS). Based on observations and in-depth interviews, it was found that the sources of lead contamination in water spinach come from agricultural environments, transportation using open vehicles, selling locations near main roads, and the use of black plastic packaging by vendors. In addition, vendor behaviors such as displaying water spinach without covering (transparent plastic) during sales may increase the risk of lead exposure from dust or environmental pollution surrounding the selling area. Furthermore, the researcher conducted data triangulation and found that all four tested samples exceeded the safe lead limits according to the 2009 Indonesian National Standard (SNI): outside market samples (stems 0.839 mg/kg; leaves 1.435 mg/kg) and inside market samples (stems 0.811 mg/kg; leaves 1.379 mg/kg). This study concludes that lead contamination in water spinach does not only originate from agricultural environments but is also influenced by the distribution chain and uncontrolled sales practices.
