Abstract

This study evaluated the organic acid content in silage made from tofu waste and cassava byproduct (onggok) with variations in moisture levels and rice bran supplementation. A Completely Randomized Design (CRD) was employed, with different treatments applied to each material. The results revealed varying total acid contents: fresh tofu waste (0.32%), fresh onggok (0.80%), pressed tofu waste (0.24%), pressed onggok (0.76%), tofu waste with 6.9% rice bran (0.43%), tofu waste with 7.7% rice bran (1.06%), and onggok with 15.3% rice bran (1.45%). Rice bran supplementation significantly increased the acid content, as it provided soluble carbohydrates that enhanced lactic acid bacteria fermentation. Although moisture reduction through pressing decreased water content, its effect on acid production was not significant. Correlation analysis indicated a weak relationship between acid concentration and pH (R² = 0.05), and no significant correlation with dry matter loss (DML), suggesting that other factors, such as anaerobic conditions, also played a role. In conclusion, rice bran supplementation effectively improves silage quality, but further research is needed to optimize moisture levels and bran ratios, along with microbiological evaluation to better understand fermentation dynamics. This study offers a sustainable solution for utilizing agro-industrial byproducts as livestock feed through silage technology.
