Abstract

The campus canteen has been considered to have played an important role in providing food and beverages for the academic community. The canteen has been required to meet hygiene and sanitation standards. The importance of hygiene and sanitation in a canteen has been emphasized to ensure that the food and beverages sold are kept clean, safe, and healthy for consumption, as well as to prevent the spread of diseases. Based on BPOM data in 2023, 1,110 cases of food poisoning have been recorded. In the South Sumatra region alone, 6 cases have been reported with a total of 6 patients. Foodborne disease outbreaks (KLB) with a percentage of 51% have been identified to occur in campus/school canteens. This has been caused by contaminated food products and canteens that have not been fulfilled the hygiene and sanitation requirements. This study has been conducted to analyze the implementation of hygiene and sanitation in the Campus A Canteen of UIN Raden Fatah Palembang. The research design has been descriptive qualitative with an observational approach. The study has been carried out in 4 canteens at Campus A UIN Raden Fatah. The total informants in this study have been 17 people, consisting of 1 key informant, 8 main informants, and 8 additional informants selected using purposive sampling. Data collection has been conducted through in-depth interviews, observation (checklist), and documentation. Data validation has been performed using the triangulation method. The results have shown that overall, the canteens at Campus A UIN Raden Fatah Palembang have not been fulfilled the requirements stated in the Ministry of Health Regulation No. 1096 of 2011. The variables that have not been fulfilled include food handler hygiene, canteen building condition, handwashing facilities, wastewater drainage (SPAL), dishwashing facilities, and waste disposal facilities. The variables that have been fulfilled include the clean water source used and the absence of vectors. The canteen that has been fulfilled the most requirements has been canteen 1, while the canteen that has been fulfilled the least requirements has been canteen 4. Therefore, it has been concluded that the implementation of hygiene and sanitation in the Campus A Canteen of UIN Raden Fatah Palembang has still been classified as low. Thus, guidance, supervision, and improvement of facilities and infrastructure have been needed to create a healthy and safe campus canteen.
