Abstract

Pasar tradisional menjadi tempat strategis dalam penyediaan makanan, namun kebersihan dan keamanan pangan masih menjadi perhatian. Penelitian ini bertujuan untuk menganalisis penerapan prinsip higiene sanitasi pengolahan makanan pada pedagang Model X di Pasar Kuto Kota Palembang, berdasarkan Permenkes No. 1096 Tahun 2011. Penelitian ini menggunakan metode kualitatif deskriptif, dengan teknik pengumpulan data melalui wawancara mendalam, observasi, dan photovoice. Informan terdiri dari pemilik usaha, penjamah makanan, dan konsumen tetap. Uji validitas dilakukan dengan triangulasi sumber dan teknik. Hasil penelitian menunjukkan bahwa sebagian prinsip sudah diterapkan, seperti pemilihan bahan segar dan pemisahan bahan kering dan basah. Namun, ditemukan praktik yang tidak sesuai seperti penyimpanan makanan yang tidak tertutup, penggunaan alat masak yang tidak sepenuhnya food grade, serta penyajian tanpa pelindung diri. Faktor penghambat penerapan higiene meliputi keterbatasan modal, kurangnya edukasi, dan pengawasan. Kesimpulannya, penerapan prinsip higiene sanitasi belum sepenuhnya sesuai dengan standar yang ditetapkan. Perlu adanya pembinaan dan pengawasan dari pihak terkait agar pedagang dapat meningkatkan praktik pengolahan makanan yang lebih higienis.
