Abstract

Street food served by informal vendors was one of the most accessible food alternatives for students around the Universitas Sriwijaya Indralaya campus. In addition to its quick and convenient preparation, its affordability made it suitable for students' economic conditions. However, hygiene and sanitation practices among street food vendors (PKL) were often neglected, posing a potential risk for foodborne illnesses. This study aimed to analyze the factors associated with food hygiene and sanitation practices among street food vendors in the Universitas Sriwijaya Indralaya area, including sociodemographic factors, knowledge, and attitudes.This research employed a cross-sectional design with a sample of 80 vendors selected using purposive sampling. Data were collected through interview and direct observation by the researcher. Data analysis was conducted using univariate and bivariate methods with the chi-square test. The study results showed that only 48.1% of respondents practiced good hygiene and sanitation. There was a significant relationship between education level and hygiene and sanitation practices (p < 0.001; PR = 6.476; 95% CI: 2.111–19.865), length of work experience (p = 0.002; PR = 5.775; 95% CI: 1.993–16.732), knowledge (p = 0.003; PR = 5.113; 95% CI: 1.830–14.287), and attitude (p < 0.001; PR = 15.984; 95% CI: 5.343–47.817). In contrast, age (p = 1.000) and gender (p = 0.175) showed no significant association with hygiene and sanitation practices. Based on these findings, education level, knowledge, and attitude were significantly associated with food hygiene and sanitation practices among street food vendors at Universitas Sriwijaya Indralaya, while age, gender, and length of work were not. The researcher emphasized the importance of increasing education and training efforts for street food vendors, especially those with lower education levels, to help them understand and implement proper hygiene and sanitation practices in accordance with public health standards.
