Abstract

Penelitian ini bertujuan untuk mengetahui pengaruh waktu pengukusan dan pengaruh penambahan starter terhadap sifat fisikokimia dan sensoris bekasam. Penelitian menggunakan metode rancangan acak kelompok (RAK) faktorial dengan dua faktor perlakuan yaitu waktu pengukusan (A) yang terdiri dari 3 taraf perlakuan pengukusan (0,5,10 menit) dan starter (B) yang terdiri dari 2 taraf perlakuan (penambahan starter dan tanpa penambahan starter) dengan tiga kali pengulangan. Parameter Kimia yang diamati meliputi kadar air, kadar protein, kadar lemak, kadar abu dan kadar karbohidrat. Parameter Fisik yang diamati meliputi uji kekerasan dan warna (lightness, chroma dan hue). Parameter sensoris yang diamati meliputi kenampakan, tekstur, aroma dan rasa. Hasil analisis kimia menunjukan bahwa perlakuan penambahan starter dan perlakuan lama waktu pengukusan berpengaruh nyata terhadap nilai kadar air (57,19-60,73%), nilai kadar protein (18,68- 21,99%), kadar lemak (5,07-9,34%) sedangkan penambahan starter berpengaruh tidak nyata terhdapa nilai kadar abu(6,93-9,87%) dan kadar karbohidrat (2,51-5,92%). Hasil analisis fisik menunjukan perlakuan lama waktu pengukusan berpengaruh nyata terhadap nilai chroma(6,13-13,43%) sedangkan perlakuan penambahan starter dan perlakuan lama waktu pengukusan berpengaruh tidak nyata terhadap nilai kekerasan (479,33-629,8 gf), lightness (50,1-60,63%) dan hue (32,43-55,6°). Hasil analisis sensori menunjukan bahwa perlakuan berpengaruh tidak nyata terhadap tekstur, rasa dan aroma serta ber¬pengaruh nyata terhadap parameter kenampakan.
