Abstract
This research aims to know the content of differences in the addition of enzyme concentrations to the bioactive component of the collagen hydrolyzate of snakehead fish (Channa striata) skin collagen. This research method used randomized block design method (RBD) with 3 different treatments of addition of papain enzyme concentration (5%, 10%, 15%) and repeated 2 times with several stages, a follow preparation and pretreatment of snakehead fish skin, produce hydrolyzate collagen, then observe the collagen hyrolyzate characteristic. Parameters observed were the measurement of the degree of hydrolysis, analysis of peptide levels, and analysis of antioxidant activity. The results also showed degree of hyrolysis 57,76%-90,37% and peptide content (10,71%-12,39%) these results also show that the difference in the addition of the papain enzyme concentration had a significant effect on level 5%. On the other hand the antioxidant aktivity range values were 8.185-10.463 ppm and the differentation of papain enzim concentration has no significant effect.
