Abstract
This study aims to determine the effect of probiotics from kumpai tembaga grass (Hymenachne acutigluma) silage to physical quality of Rooster meat. This study was carried for three months in experimental Housing of Animal Science Study Program, Laboratory of Animal Feed and Nutrition and Laboratory of Agricultural Product Technology, Agriculture Faculty, Sriwijaya University. This study used 100 Roosters obtained from PT Japfa Comfeed and using commercial rations derived from PT Charoen Pokphand Indonesia. This study used a completely randomized design (CRD) with 5 treatments and 4 replications. The treatments consisted of P0 (feed), P1 (feed + 0,2% of probiotics), P2 (feed + 0,4% of probiotics), P3 (feed + 0,6% of probiotics), P4 (feed + 0,8% of probiotics). The observed parameters include pH, water holding capacity, cooking loss and tenderness. The result shown that the addition of probiotic from kumpai tembaga grass (Hymenachne acutigluma) silage has a real effect (P<0,05 ) to physical quality of Rooster meat. The conclution obtained in this study is the addition 0,4% of probiotics was able to affect the physical quality of Rooster meat. Key words : Physical quality, probiotic, ration, rooster.
