Abstract

The purpose of this study was to determine the effect of gambir addition on physical, chemical and functional characteristic of instant functional drinks from a combination of robusta coffee, ginseng, and gambir extract. This study used a non-factorial Completely Randomized Design (CRD). One factor was investigated, namely proportion of robusta coffee, ginseng and gambir and consisted of six levels (F1 = 97.5% instant powder of coffee-ginseng : 2.5% gambir extract; F2 = 95% instant powder of coffee-ginseng : 5% gambir extract; F3 = 92.5% instant powder of coffee-ginseng : 7.5% gambir extract; F4 = 90% instant powder of coffee-ginseng : 10% gambir extract; F5 = 87.5% instant powder of coffee-ginseng : 12.5% gambir extract; and F6 = 85% instant powder of coffee-ginseng : 15% gambir extract). All experiment was conducted in triplicates. The observed parameters were physical (solubility rate), chemical (water contentand pH value) and functional (antioxidant activity) characteristics. The results showed that the formulation significantly affected the solubility rate, water content, pH value, and antioxidant activity. The highest value for antioxidant activity (IC50) was 87.46 ppm; the lowest water content was 7.10%; the dissolution rate was 26.78 seconds, and the highest pH value was at 5.68. The best treatment obtained based on the analysis of antioxidant activity and considering sensory properties of taste, color, and aroma is F4 treatment with a caffeine content was 1.26%
