Abstract
The purpose of this study was to determine the phytochemicals compound and antioxydant activity of passion fruit. This research used a non-factorial completely randomized design (CRD) with the treatment namely the formulations of black tea powder : passion fruit powder (F) which consists 5 treatment and each treatment analysis was repeated 3 times. The formulations were ; F1 = 80% black tea powder : 20% passion fruit powder, F2 = 65% black tea powder : 35% passion fruit powder, F3 = 50% black tea powder : 50% passion fruit powder, F4 = 35% black tea powder : 65% passion fruit powder, F5 = 20% black tea powder : 80% passion fruit powder. The observed parameters total dissolved solid, water content, pH value, total phenol, total carotene and antioxydant activity. The results showed that the formulations of black tea powder : passion fruit powder treatment significantly affected total dissolved solid, water content, pH value, total phenol, total carotene and antioxydant activity. The results showed that the best treatment is in formulation F5 with the total dissolved solid 10,03°Brix, water content 13,36%, pH value 2,78, total phenol 60,67 mg/g, total carotene 286,67 ppm, and antioxydant activity (IC50) 83,05 ppm.
