Abstract
This study aims to determine the ability of the papain enzyme to hydrolyze the waste protein of catfish (Pangasius pangasius). The research method used is experimental laboratory and descriptive data analysis. The treatments used were papain enzyme concentrations of 3%, 6%, 9%, and 12% with a hydrolysis time of 5 hours at 55oC. In this study, the parameters was the degree of hydrolysis, protein content, and peptide content. The results of this study showed that the degree of hydrolysis of catfish waste protein hydrolyzate was at a concentration of 3% is 65.39%, concentration of 6% is 68.05%, concentration of 9% is 75.59% and a concentration of 12% decreased to 65.17%. Protein content of 3%, 6%, 9%, dan 12% of enzyme addition were 1,62%, 1,63%, 1,72%, and 1,92% respectively. While, the peptide levels were 3%, 6%, 9%, and 12% is 2,1%, 5.04%, 5,46%, and 12,81% respectively. The degree of hydrolysis were decrease because of the substrat limitation. The higher of enzyme concentration, the more substrate is needed. Due to the higher of enzyme addition, it will increase the protein and peptide content.
