Abstract

Ozone is an antimicrobial agent with great potential applications for food preservation. In this study, high ozone concentrations were used to improve the quality of black pepper powder. The qualities that observed in black pepper powder were the total of bacteria and the water loss content. In this experiment, aluminum granules were used as electrodes in DBD chamber that have 25 cm and 30 cm length. The alternating high voltage that used was 6 KV to 7 KV and pure oxygen (O2) was used. The results showed that DBD chamber with 30 cm length produced 32,652% higher ozone concentration than 25 cm DBD chamber at 7 KV. Black pepper powder samples were treated by 466,43 ppm ozone concentration. Testing number of bacteria in black pepper powder samples used TPC method. The average total of bacteria in black pepper powder samples without ozone treatment was 153x105 CFU/g, however samples are treated with ozone for 15, 30, 45, and 60 minutes decreased the total of bacteria in a row by 18,56%; 61,70%; 89,02%; and 94,90%. In water loss content testing used drying method with oven on 105oC for 3 hours. The average water loss content in the black pepper powder sample without treated was 13,33%, however the samples are treated with ozone for 15, 30, 45, and 60 minutes were decreased water loss content in a row by 8,60%; 7,61%; 7,17%, and 6,94%.
