Abstract

NUTRITION FACULTY OF FUBLIC HEALTH SRIWIJAYA UNIVERSITY Thesis, 21 September 2021 Yuni Erlinda, mentoring by oleh Dr. Rostika Flora, S.Kep., M.Kes., AIF Development of Chicken Sausage from Chicken Liver Flour and Pumpkin Leaf Bud Flour as Food Sources of Iron XIV + 94 pages, 35 tables, 12 pictures, 6 attachments ABSTRACT The main cause of iron deficiency is an inadequate intake of nutritions. Most teens often eat fast food or junk food, one of them is sausage. The purpose of this research was to develope chicken sausage from chicken liver flour and yellow pumpkin leaf bud flour as a food of iron source. This type of research was experimental with a completely randomized design (CRD). There were five additional treatments of chicken liver flour and yellow pumpkin leaf bud flour in the sausage making, namely f1 (40% : 60%), f2 (50% : 50%), f3 (60% : 40%), f4 (70% : 30%), and f5 treatment (80% : (20%). The analysis were organoleptic and chemical analysis (water levels, ash, protein, fat, carbohydrate, and iron content). The statistical of organoleptic test used a Friedman Conover test and then does a Wilcoxon Sign Rank test, whereas the chemical analysis test was not done on statistics because it was only selected based on the best treatment. From the hedonic organoleptic test results, the best treatment with the highest score was f5 formulation (80% of chicken liver flour and 20% of the yellow pumpkin leaf bud flour) that have a substance value iron was 8.34 milligrams /100 g, water level 63.22%, ashes by 3.06%, protein 1326%, fats 1.79%, and carbohydrate 18,65%.
