Abstract
This research was aimed to know the effect of coffee diameter and roasting temperature on the characteristics of decaffeinated Arabica coffee (Coffea arabica L.) using pineapple stem extract.the time of the research implementation starts in April 2021 to july 2021. The study used a completely randomized design factorial (RALF), which consisted of two treatment factors, namely diameter and roasting temperature. The parameters were yield, caffeine, water, ash, fat, protein, carbohydrate content, acidity and color. Roasting temperature and diameter of coffee beans affect the characteristics (physical and chemical) of low-caffeine coffee grounds. The highest yield value, moisture content, ash, protein, fat, caffeine and color brightness were in the A1B1 treatment (temperature 180oC, diameter > 6.5 mm) respectively 88.79%, 4.46%, 4.76% , 15.28%, 14.55%, 0.24 and 46.77 while the lowest values of yield, water, ash content, protein, fat, caffeine and color brightness were obtained in the A1B1 treatment (temperature 220oC, diameter 6, 5 mm) respectively 84.33%, 2.62%, 3.80%, 10.31%, 13.30%, 0.16%42.39. The highest yield and carbohydrate content were in the A3B2 treatment (180otemperatureC, diameter > 6.5 mm) were 70.00%, and 5.30%, respectively, while the lowest yield and carbohydrate content were in the A3B2 treatment (temperature 220oC, diameter 6.5 mm). 60.95% and 5.08%.
