Abstract

Food handlers are obliged to know about food hygiene, sanitation, and nutrition and maintain health and hygiene so that consumers are protected from food or drinks that do not meet health requirements. So far, no written guidelines regulate the sale of healthy and hygienic food in the canteen. The general objective of this research is to obtain in-depth information about the principles of food hygiene and sanitation for food handlers in the canteen of the Madang campus, Faculty of Medicine, Sriwijaya University. This research design is a qualitative study with a case study method. The selection of informants was made purposive sampling technique. The data was taken from 10 informants consisting of 1 key informant, five main informants, and four supporting informants who met the inclusion and exclusion criteria. The content analysis method was used for data analysis. Food handlers have carried out principles of food hygiene and sanitation, including the selection of food ingredients, food storage, food processing, food presentation, personal hygiene, and sanitation facilities and equipment. Still, there were some discrepancies between the applications carried out by food handlers with applicable theory and rules. The application of food hygiene and sanitation principles by food handlers in the Madang Campus of the Faculty of Medicine is not following the relevant regulations.
