Abstract

Perform functions for very important situations, in public places called services for many audiences, one of which is the hospital. Installation of hospital nutrition needed for food processing places can provide medical services. This study aims to analyze the hygiene of Food and beverage sanitation at nutrition installation of TK. IV 02.07.02 DKT Lahat Hospital. The research used descriptive research design with qualitative approach. Data collection is done through in-depth interviews, and document review. Informants in this research Press 5 (five) people. Validation of the research was done by triangulation method and method. The results of the study found that the acceptance of food is good enough, but the document receipt of food is not equipped with specifications. Not available food storage warehouse, and serving the food using a centralized way. Food handlers have implemented personal hygiene well but food handlers have not been adherent in the use of PPE. From the two samples of the examination of the number of germs obtained results are all eligible. Overall, sanitation hygiene in the hospital nutrition installation DKT Lahat is quite good, although with limited facilities owned. So needed for increased facilities and infrastructure to support food processing activities for better.
