Abstract
Tujuan penelitian ini adalah untuk untuk mempelajari proses pembuatan edible film dari ekstrak daun cincau pohon (Premna oblongifolia Merr.) yang ditambahkan pati tapioka. Penelitian dilaksanakan di Laboratorium Kimia Hasil Pertanian, Fakultas Pertanian, pada bulan April 2007 sampai Maret 2008. Penelitian menggunakan Rancangan Acak Lengkap (RAL) faktorial dengan dua perlakuan dan tiga ulangan. Perlakuan pertama adalah konsentrasi pati tapioka (1,5%, 3%, 4,5% ) dan perlakuan kedua adalah konsentrasi ekstrak daun cincau (6%, 8%, 10%). Parameter yang diamati meliputi kadar air, ketebalan, kuat tarik, laju transmisi uap air, mikrostruktur dan warna. Hasil penelitian menunjukkan konsentrasi pati tapioka dan konsentrasi ekstrak daun cincau berpengaruh nyata terhadap kadar air, ketebalan, kuat tarik, laju transmisi uap air, warna dan mikrostruktur. Ketebalan dan kuat tarik meningkat dengan penambahan konsentrasi pati tapioka dan ekstrak daun cincau, sedangkan laju transmisi menurun dengan penambahan konsentrasi pati tapioka dan ekstrak daun cincau. Nilai optimum dari kadar air, kuat tarik, ketebalan dan laju tranmisi uap air edible film 20.48%, 0.071 kgf.cm’2, 0.012 mm, 17.58 gm'224 jam'1.
