Abstract
Penelitian ini bertujuan untuk menganalisis karakteristik fisik, kimia dan organoleptik fruit leather kweni dengan penambahan mocaf Penelitian ini dilaksanakan di Laboratorium Kimia Hasil Pertanian, Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya, Indralaya dari bulan Maret 2014 hingga Agustus 2014. Penelitian ini menggunakan Rancangan Acak Lengkap Non Faktorial (RAL) dengan perlakuan penambahan mocaf yang terdiri dari 5 taraf perlakuan. Masing-masing perlakuan diulang sebanyak 3 (tiga) kali dengan faktor perlakuan (0,25 % ; 0,5 % ; 0,75 % ; 1 % ; 2 %) dan 0% kontrol. Parameter yang diamati meliputi sifat fisik (tekstur dan warna), sifat kimia (kadar air, pH dan gula total), serta sifat sensoris dengan menggunakan uji hedonik (kesukaan) terhadap warna, aroma, tekstur dan rasa. Hasil penelitian menunjukkan bahwa konsentrasi penambahan tepung mocaf berpengaruh nyata terhadap kadar air, tesktur dan warna (L*, a*, b*) dari leather kweni. Panelis lebih menyukai (skor leather tertinggi) fruit leather kweni dengan penambahan mocaf 0,75%. Karakteristik fisik (tekstur, lightness, a*, b*) dengan nilai berturut-turut 803,83 gf, 51,73 %, 11,70, 18,90. Karakteristik kimia (kadar air, pH, kadar gula total ) dengan nilai berturut-turut 21,09 %, 3,69, 21,93%. Uji hedonik dengan nilai tekstur, warna, rasa dan aroma berturut-turut 2,68, 2,88, 2,76 dan 2,68.
