Abstract

This research aims to determine the characteristics of liquid sugar yam (Dioscorea hispida Dennst) that was filtered by purifying materials, namely zeolite and activated carbon. This research was conducted at the Laboratory of Agricultural Chemistry, Department of Agricultural Technology, Faculty of Agriculture, Sriwijaya University, Indralaya in April 2010 to October 2010. This research used Block Randomized Design with one treatment factor consisted of 5 different combination o f zeolite and activated carbon. They were Ao (no treatment), Ai (paper filter), A2 (paper filter + activated carbon), A3 (paper filter + zeolite ), and A4 (paper filter, activated carbon and zeolite) and each treatment was repeated three times. The parameters were determination of reducing sugars (Luff Schoorl), total sugar content (refractometer), DE value, viscosity (Oswald), the degree of acidity (pH), colour intensity (Chromameter), as well as the water and HCN content of raw wild yam starch The results showed that purifying materials had significant effect on the viscosity, lightness, chroma and pH o f liquid sugar yam. The treatment of A4 (paper filter, activated carbon and zeolite) was the best treatment for producing liquid sugar yam with a high level of clarity with the lightness value of 86.67%, 4.04% chroma, 287.43° hue, 74.67 poise viscosity, 6.41 pH, 31.20 g / L reducing sugar, 31.20 DE and 15.03 ° Brix total sugar content
