Abstract

Tujuan dari penelitian ini adalah untuk menganalisa karakteristik fisik, kimia dan aktivitas antibakteri bubuk daun sirsak dengan metode pengeringan dan varietas yang berbeda. Penelitian ini dilaksanakan di Laboratorium Kimia Hasil Pertanian dan Mikrobiologi Hasil Pertanian, Jurusan Teknologi Pertanian, Fakultas Pertanian Universitas Sriwijaya, Indralaya, Sumatera Selatan pada bulan April sampai dengan Desember 2011. Penelitian ini menggunakan Rancangan Acak Kelompok (RAK) dengan dua faktor perlakuan. Setiap kombinasi perlakuan diulang sebanyak tiga kali. Faktor pertama varietas sirsak (Aj = sirsak varietas ratu dan A2 = sirsak varietas irisan) dan faktor kedua metode pengeringan (Bo = daun segar, Bj = oven 50°C dan B2 = pengeringanginan). Parameter yang diamati adalah kadar air, total fenol, aktivitas antioksidan, warna (lightness, chroma dan hue) dan aktivitas antibakteri. Hasil penelitian menunjukkan bahwa perlakuan varietas sirsak berpengaruh nyata terhadap kadar air dan warna (lightness, chroma dan hue), sedangkan perlakuan metode pengeringan berpengaruh nyata terhadap kadar air, total fenol, aktivitas antioksidan dan warna (lightness, chroma dan hue). terdapat pada perlakuan A1B1 (Sirsak varietas ratu dengan pengeringan oven suhu 50°C) dengan nilai kadar air (9,57%), total fenol (182,97 mg/L), aktivitas antioksidan Perlakuan terbaik (85,60%), warna (lightness 49,33%, chroma 17,50%, hue 128,97°) dan memiliki aktivitas antibakteri terhadap Staphylococcus aureus.
