Abstract
Tujuan dari penelitian ini adalah untuk mengetahui sifat fisik dan kimia pati ganyong (Canna edulis Kerr) menggunakan Asam Klorida (HC1). Penelitian ini menggunakan Rancangan Acak Lengkap Faktorial dengan dua faktor perlakuan dan diulang sebanyak tiga kali. Faktor yang pertama adalah pH (4,5 ; 5 ; dan 5,5) dan yang kedua adalah waktu hidrolisis (6, 12, dan 18 jam). Parameter yang diamati adalah analisa fisik (warna dan rendemen pati) dan karakteristik kimia (kadar air, kadar abu, kadar total pati, kadar serat pangan total, dan kadar pati resisten). Hasil penelitian ini menunjukkan bahwa faktor pH dan lama hidrolisa dan interaksi antara kedua faktor perlakuan berpengaruh nyata terhadap warna a, b, kadar abu, kadar pati, kadar serat pangan total, dan kadar pati resisten, sedangkan rendemen pati dan kadar air tidak berpengaruh nyata. Perlakuan PjL3 (pH 4,5 dan lama hidrolisa 18 jam) merupakan perlakuan terbaik dengan karakteristik lightness 70,73%, warna a 5,57%, dan warna b 14,37%, kadar air 3,43%, rendemen pati 78%, kadar abu 5,95%, serat pangan total 38,91%, kadar total pati 16,27% dan kadar pati resisten 68,38%.
