Abstract
Penelitian ini bertujuan untuk mengetahui pengaruh suhu awal sirup nata de coco yang disimpan pada suhu ruang dalam kemasan polietilen (PE) dalam menentukan umur simpan (selflife). Penelitian ini dilaksanakan di Laboratorium Kimia Hasil Pertanian, Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya Indralaya pada bulan Maret 2011 sampai dengan Juli 2011. Penelitian ini menggunakan metode Extended Storage Studies (ESS) dengan sampel yang terdiri dari 4 taraf perlakuan untuk suhu awal sirup nata de coco yaitu tanpa perlakuan suhu awal (kontrol), suhu awal 60 ±3 °C, suhu awal 70 ±3°C, suhu awal 80 ±3°C dan diulang sebanyak tiga kali. Parameter yang digunakan meliputi uji mutu sensoris, Total Plate Count (TPC), kadar gula total, kadar asam total, dan pH. Hasil penelitian menunjukkan bahwa titik kritis pH kerusakan sirup nata de coco adalah 6,08. Berdasarkan titik kritis pH, masa simpan sirup nata de coco untuk perlakuan kontrol, 60 ± 3°C, 70 ± 3°C, 80±3°C berturut-turut adalah 3 hari, 3,7 hari, 6,29 hari, dan 9,26 hari. Total mikrobia sirup nata de coco pada waktu kadaluwarsa untuk perlakuan kontrol, 60 ± 3°C, 70 ± 3°C, 80 ± 3°C berturut-turut adalah 4,60 log cfu/mL, 7,98 log cfu/mL, 7,86 log cfu/mL, dan 7,80 log cfu/mL.
