Abstract

Tujuan penelitian ini adalah untuk mengetahui karakteristik rengginang dengan lama perendaman ubi kayu dan konsentrasi tapioka untuk menghasilkan rengginang ubi kayu berwarna putih dan renyah. Penelitian ini telah dilaksanakan di Laboratorium Kimia Hasil Pertanian dan Laboratorium Sensoris, Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya, Indralaya. Penelitian ini dilaksanakan pada bulan Maret 2011 sampai dengan Juli 2011. Penelitian ini menggunakan metode Rancangan Acak Kelompok Faktorial (RAKF) dengan 2 (dua) faktor perlakuan dan setiap kombinasi perlakuan diulang sebanyak 3 (tiga) kali. Dua faktor perlakuan terdiri dari lama perendaman (Ai ; 24 jam, A2 ; 48 jam, A3; 72 jam) dan konsentrasi tapioka (Bi; 5%, B2; 10%, B3; 15%). Parameter yang diamati adalah rendemen, total mikrobia, kadar air, tekstur, warna (lightness, chroma, hue) dan uji hedonik (warna, aroma, tekstur dan rasa). Hasil penelitian menunjukkan bahwa lama perendaman dan konsentrasi tapioka berpengaruh nyata terhadap tekstur, warna (lightness, chroma, hue) dan uji hedonik (wama, rasa dan tekstur). Perlakuan lama perendaman 48 jam dan konsentrasi tapioka 5% (A2Bi) adalah perlakuan terbaik dengan nilai rendemen (44,75%), total mikrobia (7,69 log CFU/mL), kadar air (12,23%), tekstur (153,13 gf), (jlightness 60,76%, chroma 19,46% dan hue 70,83°) dan karakteristik organoieptik dengan skor rata-rata (warna 3,24, rasa 3,20 dan tekstur 3,12).
