Abstract
Tujuan penelitian adalah untuk mempelajari karakteristik fisik, kimia, dan sensoris stick timun suri (Cucumis melo L.) pada perbandingan konsentrasi bubur timun suri. Penelitian ini dilaksanakan di Laboratorium Kimia Hasil Pertanian, Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya, pada bulan Agustus 2011 sampai dengan Juni 2012. Penelitian menggunakan Rancangan Acak Lengkap Non Faktorial. Setiap perlakuan diulang sebanyak 3 kali. Perlakuan adalah penambahan bubur buah timun suri dengan konsentrasi Ao (kontrol), A\ (20% bubur buah timun suri), A2 (40% bubur buah timun suri), dan A3 (60% bubur buah timun suri). Parameter yang diamati pada penelitian ini yaitu karakteristik fisik (derajat pengembangan, wama, dan tekstur), karakteristik kimia (kadar air, kadar abu, lemak, dan serat kasar), dan karakteristik sensoris (wama, aroma, tekstur dan rasa). Hasil penelitian menunjukkan bahwa konsentrasi penambahan bubur buah timun suri berpengaruh nyata terhadap derajat pengembangan, lightness, hue, dan kadar air. Stick timun suri dengan perlakuan A2 (40% bubur buah timun suri) merupakan perlakuan terbaik berdasarkan uji sensoris dengan derajat pengembangan 20,83%, lightness 64,20% , chroma 25,03%, hue 77,6%, tekstur 376,53 gf, kadar air 4,07%, kadar abu 1,24%, lemak 52,84%, dan kadar serat kasar 0,5%. Nilai sensons menunjukkan bahwa stick timun suri dengan penambahan bubur buah timun suri 40% (A2) memiliki skor rerata kesukaan terhadap warna 3,32 (suka), aroma 3,04 (suka), tekstur 3,32 (suka) dan rasa 3,28 (suka).
