Abstract

Tujuan penelitian adalah untuk mempelajari sifat fisik, kimia, dan sensoris sari buah timun suri yang berpotensi sebagai minuman isotonik dengan penambahan natrium sitrat dan natrium karbonat. Penelitian dilaksanakan di Laboratorium Kimia Hasil Pertanian, Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya Indralaya pada bulan September 2010 sampai dengan April 2013. Penelitian ini menggunakan Rancangan Acak Lengkap Faktorial dengan dua faktor perlakuan: (A) jenis bahan pengatur keasaman yang terdiri dari 2 taraf (natrium karbonat dan natrium sitrat), dan (B) konsentrasi penambahan jenis bahan pengatur keasaman yang terdiri dari 3 taraf (0,05%, 0,1% dan 0,15%). Parameter yang diamati yaitu karakteristik fisik (warna), karakteristik kimia (pH, total padatan terlarut, kadar natrium, dan kadar kalium), serta karakteristik sensoris dengan uji hedonik (warna, aroma dan, rasa). Minuman sari buah timun suri dengan perlakuan A2B2 (natrium sitrat 0,10%) merupakan perlakuan terbaik dengan nilai warna (lightness 57,83% , chroma 17,90 /o, dan hue 87,20 °), pH 4,41, total padatan terlarut 8,20%, kadar natrium 51 mg/L, kadar kalium 94 mg/L, dan sifat sensoris dengan skor kesukaan (warna 2,80 > 3,24 dan rasa 2,72).
