Abstract

Tujuan penelitian adalah untuk mempelajari karakteristik fisikokimia jeli dengan penambahan beberapa konsentrasi gelatin dan susu. Penelitian dilakukan di Laboratorium Kimia Hasil Pertanian Jurusan Teknologi Pertanian Fakulatas Pertanian, Universitas Sriwijaya Indralaya pada bulan Mei 2011 sampai dengan Agustus 2011. Penelitian menggunakan Rancangan Acak Lengkap Faktorial (RAL) dengan dua faktor perlakuan dan tiga ulangan. Dua perlakuan yang diamati adalah konsentrasi gelatin (G1 : 10% G2 : 15% dan G3 : 20%) dan susu (S1 : 0 %, S2: 10%, S3 : 20%). Parameter yang diamati meliputi sifat fisik (tekstur dan warna ), sifat kimia (kadar air, kadar protein, kadar kalsium, nilai pH, kadar gula total dan kadar asam total) dan analisis sensoris (aroma, tekstur, warna dan rasa). Hasil penelitian menunjukkan bahwa perlakuan penambahan gelatin berpengaruh nyata terhadap tekstur, kadar asam total, kadar gula total, dan pH permen jeli timun suri. Penambahan susu berpengaruh nyata terhadap tekstur, lightness, nilai a, nilai b, kadar asam total, kadar gula total, pH permen jeli timun suri. Interaksi penambahan gelatin dan susu berpengaruh nyata terhadap kadar asam total permen jeli. Perlakuan G2S2 (gelatin 15% dan susu 10%) merupakan perlakuan terbaik dengan sifat fisik (tekstur 61,63 gf, warna dengan nilai lightness 43%, nilai a 5,60%, nilai b 9,13%), sifat kimia (kadar air 27,60%, kadar asam total 0,80%, gula total 21,73%, pH 5,17%, protein 2,07%, and kalsium 384,225 ppm), dan sifat organoleptic dengan skor kesukaan (warna 3,92, aroma 3,48, tekstur 4,04, dan rasa 4,24).
