Abstract
Penelitian ini bertujuan untuk mengetahui karakteristik fisik dan kimia dari rusip ikan seluang {Rasbora argyrotaenia) dengan perbedaan penambahan garam dan sumber karbohidrat. Penelitian ini dilaksanakan pada bulan Maret sampai dengan Mei 2015 dan metode penelitian ini mengunakan Rancangan Acak Kelompok Faktorial (RAKF) dengan dua faktor dan dua kali pengulangan serta analisa setiap sampel dalam ulangan dilakukan secara duplo. Faktor perlakuan terdiri dari penambahan garam (10%, 15%, 20% dan 25%) dan sumber karbohidrat (gula aren 5% dan beras sangrai tumbuk 5%). Parameter yang diamati meliputi analisa fisik dan kimia. Hasil penelitian menunjukkan interaksi antara pebedaan penambahan garam dengan sumber karbohidrat berpengaruh nyata terhadap chroma, total asam laktat dan protein kecuali lightness, hue, pH, kadar garam, kadar air, aktifitas air dan karbohidrat. Nilai lightness 41,08-45,48%, chroma 5,68-8,45%, hue 47,88-54,45°, pH 3,96-5,81, total asam laktat 0,57-2,72%, kadar garam 8,65-17,95%, kadar air 54,92-63,47%, aktifitas air 0,734-0,786%, protein 7,89-14,76% dan karbohidrat 2,69-4,08%. Perlakuan terbaik A2B1 dengan total asam amino sebesar 14,371% dan A2B2 sebesar 19,119% terdapat 17 macam asam amino (Asp, Glu, Ser, Gly, Ala, Tiy, Pro, Cys, His, Arg, Met, Val, Phe, Ile, Leu, Lys dan Thr).
