Abstract

Penelitian ini bertujuan untuk mengetahui efektivitas dan konsentrasi abu gosok yang terbaik untuk menghasilkan SRC yang bermutu. Penelitian ini dilaksanakan pada bulan Agustus sampai dengan September 2008, di Laboratorium Teknologi Hasil Perikanan, Laboratorium Kimia Hasil Pertanian Fakultas Pertanian dan Laboratorium Bioproses Jurusan Teknik Kimia Fakultas Teknik Universitas Sriwijaya. Rancangan yang digunakan adalah Rancangan Acak Kelompok non factorial dengan konsentrasi abu gosok sebagai perlakuan (4 %, 10%, 14%, 18%, 27%) dan 9% KOH. Masing-masing perlakuan diulang sebanyak tiga kali. Parameter yang diamati adalah rendemen, kekuatan gel, kadar air, kadar abu, viskositas dan analisis biaya. Hasil penelitian menunjukkan bahwa sifat fisik dan kimia Semi refined carrageenan menggunakan abu gosok secara umum memenuhi standar mutu karaginan. Penggunaan konsentrasi abu gosok memberikan pengaruh nyata terhadap rendemen dan mutu Semi refined carrageenan yaitu viskositas, kekuatan gel, dan kadar abu. Penggunaan abu gosok konsentrasi 27% dapat memberikan mutu yang baik dalam pengekstrakan Semi refined carrageenan yang meliputi rendemen, kekuatan gel yaitu 32,58%, 372 g/cm2.
