Abstract

Penelitian ini dilaksanakan pada bulan April 2008 sampai dengan bulan Juli 2008 di Laboratorium Kimia Hasil Pertanian dan Laboratorium Teknologi Hasil Perikanan, Fakultas Pertanian Universitas Sriwijaya. Penelitian ini bertujuan untuk mendapatkan kandungan klorofil dan senyawa fitokimia terbaik yang diperoleh dari berbagai kombinsi pelarut ekstrak mata lele. Rancangan yang digunakan berupa Rancangan Acak Kelompok, dengan dua faktor perlakuan dan tiga kali ulangan. Perlakuan adalah jenis pelarut dan kosentrasi Tween 80. Jenis Pelarut yaitu Natrium Bikarbonat dan Natrium Sitrat 12 iriM, konsentrasi Tween yaitu 0%, 0,5% dan 1% Parameter yang diamati adalah kadar total klorofil, klorofil larut air, fitokimia dan aktivitas antioksidan. Hasil penelitian menunjukkan bahwa penggunaan konsentrasi Tween 80 dan jenis pelarut berpengaruh nyata terhadap kadar total klorofil, klorofil larut air, dan aktivitas antioksidan. Perlakuan terbaik adalah ekstrak mata lele (Azolla sp) dengan kombinasi perlakuan Natrium Sitrat 12 mM dan Tween 80 1% dengan nilai kadar total klorofil 17,866 mg/L, klorofil larut air 9,169 mg/L dan aktivitas antioksidan 10,133%.
