Abstract

Penelitian ini bertujuan untuk mengetahui efektifitas C02 fase superkritis menurunkan kandungan lemak pada udang, mematikan bakteri Vibrio cholerae, Vibrio parahaemolyticus dan total kandungan bakteri pada udang segar. Penelitian ini dilaksanakan pada bulan November 2010 sampai dengan bulan Juni 2011 di Laboratorium Pertanian Pasca Saijana Universitas Sriwijaya, Laboratorium Kimia Hasil Pertanian, Jurusan Teknologi Hasil Pertanian, Fakultas Pertanian, Universitas Sriwijaya dan Laboratorium Kesehatan Palembang. Rancangan yang digunakan adalah Rancangan Acak Lengkap dengan perlakuan perbedaan lama perendaman. Waktu perendaman udang windu selama 5, 10, 15 dan 20 menit. Hasil dari peneliatian ini menunjukkan bahwa pencucian selama 15 menit dapat mematikan total bakteri, sedangkan bakteri Vibrio cholerae dapat mati total pada lama waktu pencucian 10 menit dan tidak ditemukan adanya Vibrio parahaemolyticus pada sampel. Pencucian tidak berpangaruh terhadap kadar air, tetapi berpengaruh pada kadar abu, kadar protein dan kadar lemak.
