Abstract
Penelitian ini bertujuan untuk untuk mengetahui pengaruh perbedaan jumlah asam monokloro asetat terhadap karakteriktik karboksimetil kitosan (CMCts) yang dihasilkan. Penelitian ini dilaksanakan pada bulan Agustus sampai dengan November 2008, di Laboratorium Teknologi Hasil Perikanan dan Laboratorium Kimia Hasil Pertanian, Fakultas Pertanian Universitas Sriwijaya. Rancangan yang digunakan adalah Rancangan Acak Kelompok non Faktorial dengan jumlah asam monokloro asetat yang berbeda sebagai perlakuan (0,7%, 0,9%, 1,1%, 1,3%, 1,5%) dan diulang sebanyak tiga kali. Parameter yang diamati meliputi rendemen, kadar air, kadar abu, pH, viskositas dan tingkat kelarutan. Hasil analisis ragam menunjukkan bahwa penambahan asam monokloro asetat berpengaruh nyata terhadap rendemen, kadar abu, kadar air, viskositas dan tingkat kelarutan. Penambahan asam monokloro asetat terbaik pada penelitian ini yaitu penambahan asam monokloro asetat sebanyak 1,5 g yang menghasilkan rendemen sebesar 100,72%, kadar abu 3,34%, kadar air 14,23%, pH 3,18, viskositas 12,08 cP dan tingkat kelarutan 17,02% sehingga untuk melarutkan 1 g CMCts hanya membutuhkan 5,875 mL aquades.
