Abstract
Penelitian ini bertujuan untuk mengetahui karakteristik kimiawi kerupuk ikan gabus dalam kisaran harga dan mengetahui korelasi antara harga terhadap kandungan kimiawi kerupuk ikan gabus. Penelitian ini dilaksanakan pada bulan April 2014 sampai dengan Juli 2014 di Kimia Laboratorium Hasil Pertanian, Jurusan Teknologi Pertanian, Fakultas Pertanian dan Laboratorium Bioproses Jurusan Teknik Kimia Fakultas Teknik Universitas Sriwijaya, Indralaya. Penelitian ini menggunakan metode deskriptif dari data hasil analisis laboratoris yang terdiri dari pengujian kimiawi. Parameter pengamatan yang dilakukan meliputi, kadar air, kadar abu, kadar lemak, kadar protein, kadar karbohidrat dan uji boraks. Hasil penelitian menunjukkan kadar air kerupuk berkisar antara 2,47% sampai 5,15%, kadar abu berkisar antara 1,91% sampai 4,05%, kadar protein berkisar antara 8,48% sampai 12,91%. kadar lemak berkisar antara 7,55% sampai 15,75% dan karbohidrat berkisar antara 68,44% sampai 75,68%. Tidak ditemukan kerupuk yang mengandung boraks. Hanya kadar abu yang memiliki korelasi yang sangat kuat dan signifikan terhadap harga kerupuk.
