Abstract
Penelitian ini bertujuan untuk mengkaji karakteristik fisik, kimia dan sensoris selai lembaran rumput laut {Eucheuma cottonii and Gracilaria sp.) dengan penambahan ekstrak secang. Penelitian ini dilaksanakan pada bulan Oktober 2008 sampai dengan Februari 2009 di Laboratorium Teknologi Hasil Perikanan, dan Laboratorium Kimia Hasil Pertanian, Jurusan Teknologi Pertanian, Fakultas Pertanian, Universitas Sriwijaya. Rancangan yang digunakan adalah Rancangan Acak Kelompok Faktorial dengan dua faktor perlakuan yang diulang sebanyak tiga kali. Faktor perlakuan terdiri dari jenis rumput laut {Eucheuma cottonii and Gracilaria sp.) dan konsentrasi ekstrak secang (0%, 10%, 20%). Parameter yang diamati meliputi warna, kekerasan, kadar air, aktivitas air (aw) dan evaluasi sensoris. Hasil penelitian menunjukkan bahwa perlakuan jenis rumput laut, penambahan ekstrak secang, dan interaksi keduanya berpengaruh nyata terhadap warna, kekerasan, kadar air, dan aktivitas air (aw). Persentase kekerasan, selai lembaran rumput laut 18,46 sampai 26,86gf, kadar air 24,53 sampai 42,76%, aktivitas air (aw) 0,56 sampai 0,65, dan lightness 24,53 sampai 42,76%, chroma 3,13 sampai 56,33%. Kombinasi perlakuan jenis rumput laut Eucheuma cottonii dan ekstrak secang 10% merupakan perlakuan terbaik dengan lightness 67,83%, chroma 25,26%, kekerasan 15,66gf, kadar air 27,47%, dan aktivitas air (aw) 0,67.
