Abstract
The purpose of this research was to study the physical, chemical, and sensory characteristics of red dragon fruit leather with the addition of stevia sugar and tapioca. The research was conducted in Agricultural Chemistry Laboratory and Sensory Evaluation Laboratory, Department of Agricultural Technology, Faculty of Agriculture, Sriwijaya University, from August 2017 until April 2018. This research was conducted by using Factorial Completely Randomized Design (RALF) with two factors and treatment was repeated three times. The first factor was addition of stevia sugar (0.10% ; 0.15% ; 0.20%) and the second factor was the addition of tapioca (0.5% ; 0.75%). The observed parameters were physical characteristics (texture and colour), chemical characteristics (water content, ash content, total fenol, pH, total sugar and antioxidant activity) and organoleptic test (texture, colour and taste). The results showed that the addition of stevia sugar had significant effect on water content, ash content, total sugar, texture and pH, while the addition of tapioca had significant effect on water content, total sugar, texture and colour (L* and a*). The treatment of A3B1 (stevia sugar 0.20% and tapioca 0.5%) was the best treatment with the highest level of acceptance based on organoleptic test. The characteristics of A3B1 were 20.53% water content, 1.92% ash content, 1.12 mg/L total fenol, 4.45 pH, 11.67 oBrix total sugar and 812.77 mg/mL IC50 antioxidant activity, 41.33 gf texture, 41.90% lightness, 14.03 redness, -2.53 yellowness and hedonic scores for color, texture, and taste were 3.04 ; 3.4 ; 3.28 respectively.
