Abstract
Tujuan penelitian ini adalah untuk mempelajari pengaruh konsentrasi garam terhadap karakteristik belut sawah (Monopterus albus Zuiew.) asap. Penelitian ini dilaksanakan pada bulan Mei 2009 sampai Agustus 2009 di Laboratorium Teknologi Hasil Perikanan Fakultas Pertanian dan Laboratorium Bioproses, Fakultas Teknik Universitas Sriwijaya. Penelitian ini menggunakan Rancangan Acak Kelompok (RAK) non factorial terdiri dari lima perlakuan yang diulang sebanyak tiga kali. Perlakuan meliputi konsentrasi garam (0%, 2,5%, 5%, 7,5% dan 10%). Parameter yang diamati meliputi sifat kimia (kadar air, kadar garam, kadar protein, kadar abu dan kadar lemak), dan sensoris (warna, aroma, rasa, tekstur, dan penampakan). Hasil penelitian menunjukkan bahwa perlakuan perbedaan konsentrasi garam, berpengaruh nyata terhadap kadar air, kadar garam, kadar abu dan kadar lemak pada taraf 5%, dan tidak berpengaruh nyata pada taraf 5% terhadap protein. Nilai rata-rata kadar air berkisar 24,99% sampai dengan 32,78%, kadar protein berkisar 77,63% sampai dengan 79,5%. Kadar abu 5,82% sampai dengan 16,57%. Nilai kadar lemak berkisar 1,99% sampai dengan 3,04%, dan nilai kadar garam 0,95% sampai 5,15%. Nilai rata-rata sensoris uji hedonik yaitu warna berkisar 2,96 hingga 3,56, aroma berkisar 3,12 hingga 3,48, rasa berkisar 3,08 hingga 3,56, tekstur berkisar 2,88 hingga 3,44, kenampakan berkisar 2,68 hingga 3,5. Perlakuan belut sawah (Monopterus albus Zuiew) asap terbaik yaitu perlakuan konsentrasi garam 5%.
