Abstract
Tujuan penelitian ini adalah mengetahui pengaruh penambahan bubur Nata de Coco terhadap karakteristik fisik, kimia dan sensoris kuah lakso. Penelitian dilakukan di Laboratorium Kimia Hasil Pertanian, Jurusan Teknologi Pertanian, Fakultas Pertanian. Universitas Sriwijaya. Indralaya pada bulan Oktober 2013 sampai dengan Februari 2014. Penelitian menggunakan Rancangan Acak Lengkap (RAL) dengan satu factor perlakuan yaitu penambahan bubur Nata de Coco yang terdiri dari 5 taraf perlakuan (0%, 2%, 4%, 6%, 8%) dan setiap perlakuan diulang sebanyak 3 kali. Parameter yang diamati meliputi karakteristik fisik yaitu viskositas, karakteristik kimia (padatan total, kadar abu. kadar serat kasar dan kadar protein) serta uji sensoris terhadap aroma, rasa dan kenampakan. Hasil penelitian ini menunjukkan bahwa penambahan bubur Nata de Coco berpengaruh nyata terhadap sifat fisik yaitu viskositas, sifat kimia (padatan total dan kadar abu) serta uji sensoris terhadap aroma, rasa, kenampakan. Uji protein dan serat kasar dilakukan berdasarkan oerlakuan vane dianseaD baik dan diulang sebanvak dua kali (duplo). Perlakuan terbaik ditunjukkan oleh perlakuan A4 (penambahan bubur Nata de Coco 8%) dengan nilai viskositas sebesar 10,00 dPa.s, padatan total sebesar 22,43%, kadar abu sebesar 1,64%. kadar protein sebesar 0,117%. kadar serat kasar sebesar 4,18%, serta uji sensoris tingkat penerimaan panelis terhadap aroma suka, rasa sangat suka dan kenampakan suka.
